Private Chef
I’m currently looking for a full time position as a private chef to an estate or family household. My time in executive catering at Apple made me appreciate cooking custom menus for a select group. It’s been a very natural transition to take a position cooking for private households since then. In this setting you can get to know people, understand their goals, where they come from and play an active role in helping them get to where they want to be. In a private home setting, the aim is to compliment what works for the family and not change the daily dynamic. Adding positive energy to the family environment through food and writing menus that incorporate nutrition as a main focus. Since leaving the corporate world I’ve been doing private dinners and working with several families. I’m looking forward to finding a position where I can stay and contribute something long-term. In the kitchen, our focus is always to elevate. This becomes a collaborative effort to do just that.
Plant based menus available
In the past few years I’ve had the opportunity to work with a nutritionist to create custom menus for a small group. Since then, the changes made in how I cook and positive health effects have resulted in many beneficial outcomes. This style of cooking has been in greater demand and fits the active/healthy lifestyle many folks are implementing. Adding some of these meals through the week can show results. More energy, weight loss, better sleep, better focus, longer training sessions, less pain and inflammation, faster recovery, the list goes on. While I know everyone comes from a different place on which foods work for them, I’m confident in providing these nutrition based menus that promote longevity. For any clients who are interested, plant-based cooking can be just as delicious as anything else you are currently enjoying.
Shopping and sourcing
We are extremely lucky here in Northern California to have the bounty and variety of products available year round like we do. As a chef, the quality of the ingredients used is the number one focus. Supporting local farmers is so important. Not only for reasons of quality and nutrition, but also to show that sustainable farming is a viable business and promoting more people to do it the right way. Growing up, if we weren’t growing it in the backyard, we were buying our produce from the farmers markets nearby. Sourcing fresh and organic is something I’ve continued to support. There are also groups like Water2Table which pool resources from local fisherman and are a great way to get fresh catch. Bottom line, when there is time beyond a Whole Foods run, this is how we all should be sourcing. Putting an emphasis on using local ingredients and supporting small businesses, farmers, fishermen, etc., with best practices.
